So........ I ventured into ice cream making (I've made before with and without eggs) and if you know me, I like quick and easy recipes. If you love ice creams, you will NEVER buy another as this is the only icecream you need!
Below is a soft serve vanilla ice cream made with 2 main ingredients :- double cream (whipping cream) and sugar. You add some salt to cut the sugar and you've got free reigns to add any flavour (vanilla, caramel, coconut, chocolate, mint, strawberry, cookies and cream, cookie dough, peanut butter and my favourite, pistachio! Hmmm yum!)
Believe me when I say I don't even like ice cream but I've made 4 litres in 3 weeks! It's a must try. I cannot claim ownership of this lovely recipe (Emma's goodies) but I can tell you I've added most of the listed flavor, the possibilities are endless peops!
700g double cream
400g sugar
3/4 tsp salt
2 tsp vanilla
EQUIPMENT NEEDED:-
Hand Mixer (Stand mixer)
Pot/pan
Tub for freezing
Greaseproof paper
Ice cream cone (optiinal)
HOW TO:-
1. Mix cream and sugar in a pot and place on low heat, stir occasionally until sugar dissolves
2. Add salt and vanilla
3. Pour into tub and place in the fridge for 2 or more hours (you want your cream cold so it can whip)
4. Bring ice-cream mix out and whip* for between 5 to 10 minutes depending on quantity. DO NOT overmix! Pour in bowl to freeze (I whip mine in the same bowl I freeze in).
5. Use a greaseproof paper to cover top of ice-cream and freeze for between 6 hours and preferrably overnight!
6. SERVE with any toppings. Use a scoop or put in piping bag with star tip and pipe on ice cream cone.

* You want soft peaks!
* Cab freeze without whipping but this won't be pipeable
